recipe - Soul nourishing ginger congee

Congee — a silky, savoury rice porridge — is a traditional comfort food enjoyed across Asia. Gentle on the digestive system and deeply nourishing, it’s often served to those recovering from illness, childbirth, or simply in need of warmth and balance.

This Ginger Congee recipe is designed with hormone health and postpartum recovery in mind. The warmth of ginger supports circulation and digestion, while sesame oil and seeds provide healthy fats to help stabilise hormones. Bok choy and seaweed offer mineral-rich greens for replenishment, and the egg adds a gentle source of protein to restore energy.




Ingredients

  • ¾ cup jasmine or short-grain rice

  • 6 cups water or bone broth (chicken or vegetable)

  • 2-3 tbsp fresh ginger, finely sliced or grated (more if you prefer more heat)

  • 2 cloves garlic, minced

  • 1 tsp toasted sesame oil

  • 1 egg

  • 1 small bunch bok choy, chopped

  • 1 tbsp sesame seeds

  • Small handful dried seaweed (nori or wakame), torn into pieces

  • Salt to taste




Method

  1. Rinse the rice until the water runs clear.

  2. In a pot, combine rice, water/broth, ginger, and garlic. Bring to a boil, then lower the heat and simmer, stirring occasionally until the rice breaks down and becomes creamy.

  3. Stir in sesame oil and salt to taste.

  4. Add the chopped bok choy and simmer for another 3–5 minutes, until tender.

  5. Crack in the egg and swirl gently; let it poach softly in the hot congee for a few minutes (or you can use a boiled egg)

  6. Serve warm, topped with sesame seeds, sesame oil, tamari and seaweed.

TIP:

To make meal prep easy, double or triple the rice quantity and stop after step 2. Line a tray (that fits in your freezer) with baking paper, then spoon individual portions of the partially cooked congee onto the sheet. Freeze until solid, then transfer the portions to airtight containers or zip-lock bags for storage.

When you’re ready to enjoy, simply take out your desired portions, place them in a pot with a little water or bone broth, and continue cooking as usual until creamy and heated through.
